4 cups Rotisserie Chicken
1/4 cup reduced-sodium soy sauce
3 cups finely shredded cabbage
1/4 cup Justin's Classic Almond Butter well stirred
1 seedless cucumber chopped
2 tablespoons water
1 bunch of scallions green and white parts, chopped diagonally
2 tablespoons brown sugar
1 cup cilantro chopped
2 tablespoons toasted sesame oil
1 small can of Mandarin oranges drained and chopped
2 tablespoons seasoned rice vinegar
1 teaspoon ground ginger
1 teaspoon red pepper flakes
In a large serving bowl, whisk together all dressing ingredients. Toss salad ingredients with dressing in a large bowl until combined well.Tip: Almond Butter is rich in antioxidants and protein and makes an incredible snack dip. Enjoy it by itself, with sliced apples sprinkled with cinnamon, or with baby carrots for dipping!
